posix_test: fix the ltp project link error

Add CONFIG_NET, CONFIG_NET_SOCKOPTS, and CONFIG_SYSTEM_SYSTEM to
posix_test configuration to provide the network socket options and
NXsystem() API required by LTP testcases, resolving undefined
reference errors during linking.
